The following is included in the Perkins warewash audit.

·         Inspect all dish machines for proper mechanical operation – including proper temperatures wash and rinse, proper rinse pressure and patterns, any clogged rinse nozzles or wash arms, any leaks from the dish machine, any missing o-rings causing loss of wash pressure, or loss of water from the tanks, motors working properly, and a check for worn bearings on motors or conveyor systems.

·         Inspection of the spray hose for proper operation.

·         Inspection of all dispensing equipment for proper operation and product concentration, including dish machines, pot sinks, cleaning centers and silverware pre soak stations.

·         Review of product MSDS sheets to ensure that all are posted.

·         Check for unlabeled spray bottles which could lead to possible fines.

·         Review the current frequency of preventative service calls - with Perkins, these calls are monthly.

·         Review current response times of emergency calls.

·         Inspect the results of all ware, including glasses, plates and silverware.
